Basic Food Hygiene
How to avoid intestinal parasites and food poisoning
Some of this is obviously not authentic, but we prefer not to get intestinal parasites.
- Keep food covered, to deter insects.
- Always keep raw meat and fish separate from cooked. Use a well- insulated coolbox and store it out of the sun.
- After handling raw meat, wash your hands, and the utensils, immediately in hot soapy water. Never use the same equipment for cooked and raw meat.
- Wash your hands after going to the toilet.
- Get meat out of the coolbox only when you're about to cook it- don't leave it out in the sun all day! Cooked meats should be treated in the same way.
- Fish, particularly shellfish, should be cooked and eaten as soon as possible after purchase (i.e. on the same day).
- Make sure all food is thoroughly cooked and piping hot before being eaten.
- Cooked food that is not eaten right away should be kept hot not warm, and eaten as soon as possible.
- Don't feed members of the public- if anyone gets ill after eating your food, you (and your Society) may be held responsible.
- Don't take risks with food - it's better to have some go to waste than to put people in hospital.
